The inspiration begins with the waterways that shape Canada - the briny sweep of its oceans, the icy clarity of its rivers, the wind-brushed shores where land and water meet. But it doesn’t stop there. L O R E draws just as freely from kitchens and coastlines around the world - from spice, smoke, brine, acid, and the shared traditions of people who cook from the land and the sea.
What ties it all together is a point of view: take something familiar, honour where it came from, and tell the story again. Every dish speaks in a language that feels both known and entirely new - honouring what has come before while daring to write the next chapter.
